Oatmeal Cake
1-1/2 cup water
1 stick butter
1 cup oatmeal
1 cup sugar
1 cup brown sugar
1-1/2 cup all-purpose flour
2 eggs
1/2 tsp baking soda
1/2 tsp cinnamon
glaze
1 stick butter
3/4 cup sugar
1/4 cup evaporated milk
1 tsp vanilla
optional: 1 cup coconut, 1 cup chopped nuts, 1 cup raisins
Combine water, butter and oatmeal. Heat until butter melts. Set aside for 20 minutes. Combine sugars, flour, eggs, baking soda and cinnamon. Add oatmeal mixture. Pour into a greased 13″ x 9″ pan. Bake at 350 degrees for 30 minutes.
Mix all ingredients for glaze in pan until melted. Pour over cake.
Amish White BreadÂ
2 cups warm water
2/3 cup sugar
1-1/2 tablespoon yeast
1-1/2 tsp salt
1/4 cup oil
6 cups bread flour
Add sugar and yeast to warm water. Allow to proof for 5-10 minutes. Add remaining ingredients and stir to incorporate. Knead for 5 minutes or so, cover and sit in warm place to rise until doubles in size. (usually an hour or two) Punch down and knead, divide in two and place in 2 greased loaf pans. Allow to rise about 30 minutes. Bake for 30 minutes at 350 degrees. Brush tops with butter and enjoy!
